Potter's Bakery owner Kathy Potter fills batches of paczki in preparation for Paczki Day on Tuesday, a Polish tradition on the day before Ash Wednesday, Feb. 14, which marks the beginning of the 40-day Lenten season. Potter's makes 12 varieties, ranging from red raspberry or blueberry to cream cheese or custard, and will sell a thousand dozen on Paczki Day. Potter said the only flavor she hasn't tried is the chocolate custard, which the Traverse City bakery added last year. New this year is a paczki breakfast sandwich.
